Champagne Piollot is produced by Roland Piollot and his wine Dominique Moreau from vines owned by Roland's family in the Aube. The vineyards are located primarily in the town of Polisot. Roland's father was extremely passionate about vineyard work, and replanted all of his vineyards using the selection massale method, and even kept some of the old Pinot Blanc vineyards that most of his neighbors were replanting to Pinot Noir or Chardonnay. In 1986, Roland decided to bottle the wines himself, and since 2009, they have converted the vines to organic farming. The house style is based on crisp, refreshing champagnes that are elegant and easy to drink.

Cuvée Colas Robin
100% Pinot Blanc from the Val Colas Robin vineyard in Polisot. Organic farming. The first vintage produced from grapes harvested in 2010. A fuller bodied, unique expression of Champagne. Production: 4,000 bottles/year.
Champs Rayés Chardonnay
100% Chardonnay from a blend of two different vineyards - in Noé les Mallets, "Champs Rayés" and "Derrière le Bois." The vineyard is named Champ Rayés after the striped soil due to two different colors of marl terroir. Organic farming. Production: 6,000 bottles/year.
Come des Tallants Non-Dosé
100% Pinot Noir. Grown from a parcel of less than a hectare on a hill with direct southern exposure. Organic farming. Production: 5,000 bottles/year.
Les Gravelées Rosé Brut Nature
100% Pinot Noir. Grown on lieu-dit "Les Graveles" parcel with direct southern exposure and kimmeridgiensoils. Organic Farming. No sulfites added. This is a "Saignee" rosé, deep in color, which comes from 24 hours of skin maceration, no pressurage. Production: 3500 bottles/year.
