Valentin Morel

Just a few years after earning a masters degree in international law, Valentin Morel decided he would prefer making wines inspired by his readings of biodynamic visionary Rudolph Steiner. Valentin studied winemaking in Alsace, where he was introduced and influenced by natural winemakers like Pierre Frick and Bruno Schueller. In 2014 Valentin joined the family domaine.

Valentin’s grandfather operated a sawmill in Poligny, one of the traditional “metiers” in this forested region. After retirement in 1978, he decided to plant 10 hectares of vineyards with his son Jean-Luc. From 1978 to 1985, they sold off grapes to the local co-op, and in 1985 they began bottling their own wines. Jean-Luc had long involved with the local “Confederation Paysan”, and in 1999 stopped using herbicide and began plowing all of the vineyards. This literally laid the groundwork for the conversion to biodynamic agriculture when Valentin joined the domaine and produced his first vintage in 2014.

All of the wines are produced with natural yeast, and homeopathic doses of sulfur - 1g during the crush, and 1-2g at bottling.

Chardonnay Les Trouillots and Pinot Noir Les Trouillots were produced with zero sulfur during production and bottling. To learn more about Valentin and his domaine, check out his website.

Cotes du Jura Chardonnay Les Trouillots
100% Chardonnay.  This Chardonnay comes from 35 year old vines, planted on Trouillot Marl terroir.  The grapes are hand-harvested, and pressed directly into 228 liter barrels, where fermentation and then malolactic fermentation take place.  Bottled unfiltered and with no sulfites added.  Yield 50hl/ha.

 

 

 


 

 

 

 

Cotes du Jura Chardonnay Saint Savin
100% Chardonnay.  This Chardonnay comes from 35+ year old vines, planted on the Saint-Savin terroir of limestone rocks, typical to the Jura region.  The grapes are hand-harvested.  Direct pressurage and then fermentation in steel tank.  Malolactic fermentation and elevage in demi-muids (600L).  1.5g/hl SO2 added. Bottled unfiltered.  Yield 33 hl/ha.

 

 

 

 

 

 

Cotes du Jura Chardonnay Champ d'Aubert
100% Chardonnay.  This Chardonnay comes from 35 year old vines, planted on Trouillot Marl terroir in the vineyard “Aubert.”  The grapes are hand-harvested, destemmed, and then pellicular maceration for 12 days.  Maceration and fermentation in stainless steel tanks.  Malolactic fermentation in demi-muids.  Bottled unfiltered.  No SO2 added.  Yield 35 hl/ha.

Surprisingly aromatic Nose. In the mouth, the maceration from the vinification gives the wine a tannic structure.  Try serving with poultry in a cream sauce.

 

 

 

Cotes du Jura Savagnin Naturé
100% Savagnin from 35+ year old vines, planted on the Saint-Savin terroir of limestone rocks, typical to the Jura region.  The grapes are hand-harvested.  Direct pressurage and then alcoholic and malolactic fermentations in steel tank.  Filtered.  No SO2 added.  Yield 25hl/ha.

Ouillé with complex aromatics.  The terroir lends a very structured acidity to the wine.

 

 

 

 

 

 

Cotes du Jura Rosé Pontots Mêlées
This rosé comes from 60+ year old vines, planted on Pontots blue Marne terroir.  The vineyard is planted with a mix of different traditional Jurassic varietals.  The grapes are hand-harvested and then undergo a 12-day maceration in steel tank.  Fermentation and malolactic fermenation in steel tank.  Yield 20hl/ha.

 

 

 

 

 

 

Cotes du Jura Poulsard Les Trouillots

100% Poulsard.  This Poulsard comes from 35 year old vines, planted on Trouillot Marl terroir.  The grapes are hand-harvested and put into steel tank for a 15-day maceration.  Alcoholic and malolactic fermentations in steel tank.  Bottled unfiltered and 1g/hl of SO2 added at bottling.  Yield 45 hl/ha. 

 

 

 

 

 

Cotes du Jura Pinot Noir Les Trouillots

100% Pinot Noir.  This Pinot Noir comes from 35 year old vines, planted on Trouillot Marl terroir.  The grapes are hand-harvested and destemmed, and put into steel tank for a 12-day maceration.  Alcoholic and malolactic fermentations in steel tank.  Bottled unfiltered and 1g/hl of SO2 added at bottling.  Yield 45 hl/ha. 

 

 

 

 

Cotes du Jura Trousseau Les Trouillots

100% Trousseau. This Trousseau comes from 35 year old vines, planted on Trouillot Marl terroir.  The grapes are hand-harvested whole cluster and put into steel tank for a 12-day maceration.  Alcoholic and malolactic fermentations in steel tank.  Bottled unfiltered.  No SO2 added.  Yield 40 hl/ha.
